Sharing Garden to Table Recipes with Island Bay School Families

VISION: SKILLS BASED FOOD EDUCATION IS AVAILABLE TO EVERY NEW ZEALAND CHILD



MISSION:To be the leading facilitator for the delivery of food education / literacy resources and knowledge in New Zealand


PURPOSE: To establish a programme to train and educate children in New Zealand in the practice of

  • Creating gardens growing fruit and vegetables

  • Harvesting the bounty of the gardens

  • Cooking the produce, using kitchen equipment they have been shown how to safely use, to produce delicious food

  • Sharing the food they have prepared around the table with their classmates, teachers and volunteers

  • Sharing their accomplishments through writing and images

  • To develop operating and training materials for schools, teachers and volunteers to facilitate the rollout of Garden to Table throughout NZ

  • To engage with the appropriate authorities to lobby for the inclusion of gardening and cooking in all schools


The recipes I have chosen here could be readily made by most Year 5-6 children at our school with some supervision. All other age groups will require adult supervision at all times.

Recipes


1.) Sam and I used both plain and wholemeal flour variations of this flat bread recipe. We use the flat bread to accompany vegetable stews with lentils and chickpeas and also with curries. We found that a tiny amount more oil was required for the wholemeal variation, and you can brush the patty with a little melted butter before cooking too. Cooked without oil etc, in a dry pan.



2.). This is an easy to make yummy hummus which I have made with the junior kiddies at school. They gave it a favourable rating.



3.). Notes: The only limit to the variety of this salad is your imagination! (And what’s in the garden). You can use whatever you have to hand to create a delicious fresh salad. The contents of this salad will naturally change with the seasons, depending on what is available to eat in the garden.

4.). Fun with muffins. We have also made these at school and they are relatively easy to make.




5.) Tasty, easy to make muffins with apples that could be in your own back garden at this time of the year.



6.). Hey kids, make this for your parents OR Don't feel like cooking tonight parents? Have your older children make this delicious, easy to make soup for evening meal, along with Grissolini bread which is next up.




7.). Grissini - Italian bread sticks for that Mediterranean feel meal. Yum.


8.). To fight off those winter bugs, try this green recipe. Could be a main for a small family or a side for larger families.




9.). A yummy dessert to round off an evening meal. Could use both apple or rhubarb, but just as good with only apply or only rhubarb. Taste to make sure if only rhubarb it's not too tart. Add sugar/honey to taste.
